Stuffed mussels

Stuffed mussels


( Ari kallummakaya/ Ari kadukka ) simplified using idly steamer

Ingredient-
20 Fresh mussels clean and reserve some clean water of mussels
2 cup Par boiled rice
1 cup Grated coconut
1 tbsp Chopped Shallot
3 tsp Fennel seed
curry leaves chopped
salt

For marinate-
2 tsp Chilly powder
½ tsp Turmeric powder
1 tbs ginger and garlic paste or chopped
Oil for frying

Clean the mussels and open the shell (to open the shell insert knife at straight portion of the slit and slide around carefully Clean and keep aside
reserve some clean water of mussels to use for grinding the rice

Wash and soak the rice for 4- 6 hour, Drain rice and mix with grated coconut, shallot, fennel seed, salt and grind with mussels water until get thick dough add chopped curry leaves
Heat water in idly steamer, grease the tray with coconut oil fill the dough on try hole and put each mussel on top see image cover the steamer and steam it for 25-30 minute or done. and let it cool
Take the steamed dough and marinate with chilly powder, turmeric powder, ginger and garlic paste and pinch of salt, And In a pan heat oil and shallow fry marinated mussels both side. Stuffed mussels is ready
(Note: Instead of grinding rice you can use rice flour. For this preparation you have to grind coconut, shallot and fennel seed first then mix this into rice flour and add equal amount of Stuffed mussels water with salt into it (for 1 cup rice flour 1 cup water). Mix properly and make thick smooth dough.)

1/2 TBSP GELATIN (SOAKED IN 1 1/2 TBSP COLD WATER )
200 ML MILK
50 ML CREAM / MILK
1/4 CUP SUGAR

METHOD
IN A BOWL HEAT 100 ML MILK ADD GELATIN MIXTURE COOK TILL DISSOLVE ADD SUGAR THEN ADD COFFEE POWDER MIX TILL DISSOLVED REMOVE FROM FIRE ADD REMAINING MILK AND CREAM COOL IT AND POUR THE MIX IN A OILED BOWL THEN FREEZE UNTIL SETS.

Ingredient-

250 gm shredder cabbage
250 gm shredder carrot
1 tsp ginger chopped
1 tsp garlic chopped
1 tbs corn flour + 1 tbs water mix together and keep
2 pinch of organic ajinomoto
1 tsp oil
2 pinch of black pepper

Method.

Add oil in a pressure cooker saute chopped ginger and garlic till brown then add vegetable add salt cook till one whistle then remove the cover, then add corn flour mix to thicken add ajinomoto and black pepper.

2 egg
200 ml milk
4 tbs sugar
1 slice bread
1/4 orange rind + 2 orange segment remove Seeds
For Caramel:
2 tbs sugar + 1 tbs water
Method:
Make caramel using 2 tbs sugar dilute with 1 tbs water , remove from fire, grind orange skin, orange segment, and sugar to fine paste , add egg and bread blend to fine paste, then mix milk and steam till set, cool it.

500 gm rice
2 pod cardamon
1 inc Cinnamon
1000 ml water
salt
Method-
In a pressure cooker add 1/2 tsp oil saute cardamon and cinnamon, add salt add water boil, then add rice, cook till two whistle then off the fire. once the steam is over remove the lid.
For Marinate-
500 gm fish
1/4 tsp turmeric powder
1/4 tsp red chili powder
salt.
Marinate and keep aside
For Masala-
250 gm onion slice
250 gm tomato slice
1 tbs ginger paste
1 tbs garlic paste
2 green chili
1/4 tsp garam masala powder
1/4 cup coriander leaves
1/4 cup mint leaves
2 pod cardamon
1 inc Cinnamon
1/4 turmeric + red chili powder
method-
In a pressure cooker add 2 tsp oil saute cardamon and Cinnamon then add onion garlic ginger and crushed green chili then closed the lid cook till one whistle off the fire wait till the steam release, open the cover now add tomato, garam masala powder, turmeric + red chili powder and coriander leaves
and mint leaves close the lid and cook till 4 whistle, off the fire wait for the steam release, open the lid, take a non stick pan transfer all the masala to the pan add the fish and cover the pan then cook till done, then add rice over the masala and simmer the biriyani till set and done. follow step by step image

Method;

Blend Cooked rice add to rice powder make crumb and steam it place drumstick leaves in between all cake

1 tsp mustard.

Method-
Saute onion till transparent add ginger and garlic paste add tomato add turmeric powder, red chili powder add oregano or Ayamodagam add salt and tamarind add 200 ml water boil, then add fish, cook till boil, off the fire, remove fish and any born from the gravy, In a pressure cooker boil 800 ml water add ajinomoto and the gravy and add fish flesh, cook for 2 whistle then off the fire. once the steam is over remove the lid. tasty fish rice ready

Ingredient-
1 cup flour + 1/2 tsp baking powder + 1/4 tsp salt sieve together 
1/2 cup warm milk ( 105 df to 115 df )
1 tbs sugar
1 tsp instant yeast
1/2 tsp oil
1 egg whipped
Method-
Mix sugar in milk add yeast, keep for fermentation sprinkle 1 tsp flour on top cover it, then add flour in to the yeast mixture then add whipped egg lastly add oil and cover the dough keep aside for 1 hour, After an hour you will notice the bubbles formed on the dough.
Heat the oil at medium temperature & drop in little dough. It will pop up
as soon added to hot oil. Keep the flame at medium. Fry till golden brown. Dip in syrup or eat with date syrup
For the syrup
sugar 1 cups
water 1/2 cup
1/4 tsp cardamom powder
cook till thick
For date syrup-
dates soak in water
sugar if needed

Method-
Mix all and knead to hard dough, don't rest, roll to thin sheet and cut as desire, or use pasta machine, boil water add salt and oil add the noodles once it is floating remove and drain.
For the sauce-
I onion slice thin
3 garlic chopped
1/2 inch ginger chopped
1 chicken cube + little water
1 tsp soya sauce
salt
Saute onion till brown add ginger and garlic saute then add chicken cube mixture then add soya sauce and salt, saute add drained noodles.

Mix sugar in milk add yeast, keep for fermentation sprinkle 1 tsp flour on top cover it, the knead all to smooth dough keep to rise. and roll to make two equal size sheet, then take a sheet of dough and spread the tomato sauce and add minced meat, lastly add cheese, and cover with the other sheet of dough, then take a glass put in center of the dough press the glass and make a round sign, then take knife cut the dough to 8 slice and twist the as the image. wash with egg beaten, then bake the pizza

Soft Beef Kebab simplified


Ingredient- 

500 gm beef / mutton / chicken
2 tbs corn flour
4 pod garlic
1 inc ginger
1 tsp black pepper
salt

Method-

Grind meat with the above ingredient, make a small disk, and sallow fry like frying fish both side ( 3 minute each side ) til brown.

Sauce-

3 tomato
4 pod garlic chopped
1 tbs suagr
1 tsp salt
1 tsp corn flour + i tsp water
oil

Method-

Grind tomato to paste, add oil saute garlic till brown add tomato paste cook till lightly tick add salt add sugar the thicken with corn flour mixture
